What do you quench a blade in?

Oil seems to be the most popular quencher in modern times, but if I think too much about flash point and stuff it begins to feel more like cooking than blacksmithing, but oh, well, if it works then it works!

If you’re making a sword, do you go full-on historical about it? What do you use then?

The blade should be at austenitizing temperature when it hits the oil
