Better steel for blade

Whats the difference of the 3 in strength and edge retention? I understand the first 3 are stainless and good quality but what REALLY separates them?
154CM
14C28N
CPM S30V
Or is it better to use one of these two?
5160( spring steel)
1095( high carbon)
